Welsh Rarebit

1/2 lb cheddar cheese - grated
1 cup milk
as needed beer
3 Tbl flour
3 Tbl butter
1/4 tsp salt
1/4 tsp pepper
1/4 tsp dry mustard
1 tsp Worchestershire sauce

- Make white sauce with flour, butter, salt, pepper, mustard, Worchestershire, milk.

- Stir in grated cheese, handful at a time and let melt.

- Thin with beer to pourable consistency.

- Serve on toast.

- MUST serve with peas.
